Extra virgin olive oil as regulated by the International Olive Oil Council is unrefined and contains the lowest level of acidity along with a host of phytochemicals, which are disease-fighting compounds from natural plant foods. An oil that contains the classification ␣extra virgin␣ must use only top quality olives that yield a pleasing aroma. Capernaum Olive Oil Mill produces Olea Essence from eleven different varieties of olives that essentially make up three types of extra virgin olive oil. Olive oil is the Talmons sole specialty, the only kind of oil produced in this mill. The three types vary according to color, taste and fruitiness. One line, the Tabha, is produced using pitted olives. The oil is lighter tasting and offers a more delicate flavor. Another is called Beit Saida. It is fruitier, with a more definite aroma.
